If you’re getting a little bored with hummus, you MUST try this Roasted Carrot Dip with Toasted Hazelnuts.
Hummus is an amazing thing. For plant eaters it’s quick, tasty, full of protein, fiber and good fats. It’s great to dip into, or make as the main schmear in a sandwich. It’s also fantastic that at this day and age you can even find it at a gas station or rest stop along with some pretzels. It’s the ultimate go to for anyone.
Beet hummus was a thing there for awhile. I love beets, as you can tell by the many recipes I have made using them, however, I find it difficult to get behind that craze. Am I alone here? Plus, messy messy.
I came across this recipe (cannot remember where) that is loaded with lots of flavors that add so much depth to this simple dish. The carrots are tossed with spices and roasted, along with some gorgeous hazelnuts. There are all the usual things, but what a flavor bomb this is!!
It really doesn’t taste like traditional hummus at all, but rich in earthy notes from the roasted carrots, the aromatic hazelnuts, orange juice, nutmeg and topped off with some crispy sage leaves and sage oil.
I roasted my carrots and nuts in my air fryer- which is beyond awesome. No time preheating the oven, easy to manage, and done in about 20 minutes.
This is good enough for entertaining and will brighten up any app platter you have going.
