So here we are, in the midst of a global pandemic. A virus. A teeny tiny thing that is causing havoc the world over. We have learned to wash, wash, wash our hands and to drink plenty of fluids. The CDC doesn’t talk about this, but I am pretty sure a good dose of this Golden Turmeric Soup would easily blast away any of those little buggers that might invade you.
One of the topics of conversation amongst my fellow plant eaters is how since starting this lifestyle it seems like colds and flus don’t have as much impact as they used to. In my personal experience I find this to be true. I cannot boast of never being sick, but my episodes have more often than not been a low day or two. Before it would have taken me a week of down and out illness, and I am famous for losing my voice. That just doesn’t happen anymore at all. I am grateful to have small swells as opposed to the huge tsunami’s I used to experience.
Fighting From The Inside
It is a fact that consuming foods that are anti-inflammatory does the body good in many different ways. Mostly I like to think of it as giving my inner soldiers less work to do. Think about it. If your immune system had to use its resources to keep things at homeostasis, it stands to reason that when an invader as intense as a virus affects your system it’s going to be that much harder to beat it back.
I will also say that taking care of my health as best I can also gives me some peace of mind. I am not foolish to think that I am 100% immune. However, I feel much more capable of dealing with an illness with a robust immune system. One must always take precautions, and I try to do so on all fronts.
A Superfood
Turmeric is a mighty anti-inflammatory. It’s known for relieving achy joints and muscles. It has also been linked to improved diabetes, depression and PMS symptoms. There is some thought that it can lower cholesterol and is preventative against Alzheimer’s disease. All in all a pretty powerful spice with little downside. The biggest concern is with those that take supplements and might take too much. However, consuming turmeric in your food, especially along with black pepper, is by far the best way to go.
So the next time you start feeling a little under the weather consider this soup. It only takes about 15 minutes to prepare. It is also loaded with garlic, miso and ginger, which are a coupe of other powerful anti-inflammatories. So you can’t go wrong.
Stay healthy out there my dears.
In a medium saucepan over medium heat, sautee the garlic and ginger using a little water to keep from sticking. Add the carrots, jalapeno and peppers and sautee for 2 minutes. Add the water, turmeric, black pepper, apple cider vinegar and tamari and bring the mixture to a simmer. Cook for 10 minutes. Right before serving, remove the pot from the heat. Add in the miso and stir until dissolved. Add the tofu and beans and top with scallions and serve.Ingredients
