Chat Masala Lentils- A Healthy Hunger

Today I am spending most of the afternoon at my office desk, while my college student daughter is nearby studying. Later I have a busy early evening, which means I will be home late-ish for dinner and probably won’t be in the mood to cook- much. So on my break I threw some brown rice into the rice cooker and got that going. Next I soaked some green lentils while I chopped and then sauteed onions and garlic. Then the spices. Then the lentils and water. Thirty minutes later I had dinner made, and an afternoon snack for her. Meanwhile, the whole time the dog lay napping.

Lentils are amazing. A big part of my WFPB eating and I make them several different ways. Of course they are all good and take so little time to cook, with most of it hands off. Packed with fiber, vitamins, minerals and protein. It’s a super win. I will pack half the food into containers to take home and the rest I will leave for my daughter. I will add a spinach salad to round out the meal and boom! I am done. Healthy eating does not have to be complicated or take a lot of time. Enjoy!

Ingredients

  • 1.5 cup French Green Lentils, rinsed and soaked- the longer the better, at least 15 mins.
  • 1 small onion diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1 teaspoon chaat masala
  • 1 teaspoon salt
  • 2 bay leaves
  • 4 cups wate

Instructions

Warm a medium saucepan over medium/low heat. Add the onions (no oil for me, but you could add 1 tablespoon if you like).

After 2 minutes add the garlic and cook for another 2 minutes. Add the cumin and masala and cook for one more minute.

Now add the salt, bay leaves and water. Bring it all to a boil, then reduce to a simmer.

Cook for approximately 30 minutes or until the lentils are tender. Remove the bay leaves and serve.
